Oats Rice Risotto

INGREDIENTS

  • Bagrry’s Oats for Rice - ½ cup
  • Plain rice - ½ cup
  • Water - 2 cups
  • Whole milk - 1 cup
  • Butter - 1 tbsp
  • Capsicum - ½ cup, finely sliced
  • Cauliflower - ½ cup, finely chopped
  • Cheese - ½ cup, grated
  • Pepper - ½ tsp
  • Salt - ½ tsp (optional)

PREPARATION

  • Combine Oats for Rice, plain rice and vegetables in a vessel with tight-fitting lid
  • Bring to a boil over medium heat
  • Stir once then cover with lid and reduce the heat to a simmer
  • Cook for 50 minutes. Remove from heat and let it stand in covered pot for 10 minutes
  • Add milk, stir gently and add pepper and cheese. Cook for an additional 10-15 minutes
  • Add salt (optional, since there is some salt in the cheese too)
