Oats Rice Risotto
INGREDIENTS
- Bagrry’s Oats for Rice - ½ cup
- Plain rice - ½ cup
- Water - 2 cups
- Whole milk - 1 cup
- Butter - 1 tbsp
- Capsicum - ½ cup, finely sliced
- Cauliflower - ½ cup, finely chopped
- Cheese - ½ cup, grated
- Pepper - ½ tsp
- Salt - ½ tsp (optional)
PREPARATION
- Combine Oats for Rice, plain rice and vegetables in a vessel with tight-fitting lid
- Bring to a boil over medium heat
- Stir once then cover with lid and reduce the heat to a simmer
- Cook for 50 minutes. Remove from heat and let it stand in covered pot for 10 minutes
- Add milk, stir gently and add pepper and cheese. Cook for an additional 10-15 minutes
- Add salt (optional, since there is some salt in the cheese too)
